02Scapes
This year our family is apart of a local CSA (Community Share Agriculture), and it has been fantastic so far! We have recieved a vast varity of veggies, including bok choy, numerous tyoes of lettuce, cobbage, green onions, chives, spinach, rhubarb, kohlrabi, and scapes. But what is….. kohlrabi??… or what about… scapes???? First of all, kohlrabi is a root that tasted like broccoli, and is fantastic on salads. And scapes,… well scapes are probably one of my favorite veggies that we have gotten this year. The full name of this plant is the Garlic Scape, so yes, it the stem of the garlic plant. and it is delicious. extremely tangy and a vibrant addition to mexican dishes, the garlic scape will always be a favorite ingrediant in our household.
Recently, i wanted to make guacamole, but was without the bulk of classic ingrediants used in this popular dip. So i replaced lime juice with lemon juice, green onions with dried minced onions, fresh jalepenos with jalepeno sauce, and, last but not least, minced garlic with scapes. i expecting a total disaster, but instead 9the guacamole was a huge hit.
remember: the scapes are much more tough than garlic, so you’ll have to keep it in the food processor longer than you would usually for guacamole!)
